Avocado Hummus
















Ingredients 

1.1 ripe avocado, skin and stone removed
2.400g boiled chickpeas, drained and rinsed
3.1 garlic clove, finely chopped
4.4 tsp lemon juice only
5.½ tsp ground cumin
6.Sea salt, to taste
7.Olive oil
8.Red Chili Powder

Instructions

1.Blend the boiled chickpeas in a grinder with finely chopped garlic. Keep it aside.
2.Blend avocado separately. Mix finely churned chickpeas mixture into the avocado blend.
3.Add lemon juice, ground cumin and salt. Blend again till the mixture forms a smooth paste.
4.Garnish with olive oil and red chili powder.

Cucumber Rolls















Ingredients
1.Cucumbers
2.Cottage Cheese
3.Hung Curd
4.Salsa
5.Salt
6.Pepper
7.Mixed Herbs


Instructions
1.Slice the cucumber lengthwise (as shown in picture). Place one slice on top of the other.
2.Mix grated cottage cheese, hung curd, salt, pepper and herbs in a bowl.
3.Spread the mixture on the cucumber slices.
4.Roll the slices of cucumber.
5.Garnish with a spoon of salsa.
6.Serve fresh.

Cream Cheese & Cucumber Open Sandwich





















Ingredients
1.2 Cucumbers
2.1 Box Cream Cheese
3.Multi-grain Bread
4.Freshly Cracked Pepper
5.Salt To Taste
6.Coriander (For Decoration)

Instructions
1.Wash and dry the cucumber.
2.Peel thin slices and keep aside.
3.Spread cream cheese on multi-grain bread.
4.Place the cucumber slices on the bread at a distance of 2 – 3cms. Remove the extra bits.
5.Season the slice with salt, cracked pepper and coriander. Serve immediately.

Apple Pie





















Ingredients

  1. 4 Apples
  2. 1 Tsp Ground Cinnamon
  3. 1/4 Cup Sugar
  4. 1 Tbsp Brown Sugar
  5. Pie Dough
Instructions

  1. Preheat oven to 400 degrees.
  2. Slice the top off each of your apples and scoop out the inside of the apple.
  3. In a small bowl, mix the apple with sugar and cinnamon. Spoon the filling into each apple.
  4. Unroll the pie dough and cut it into 1/4-inch strips.
  5. Lay strips of the dough on top of the apple. Then take one new strip at a time and alternate weaving it over and under the pie strips already in place.
  6. Repeat until the top of the apple has been covered. Trim excess pie crust around the edges with a knife.
  7. Place apples in a baking dish and fill with 1/4-inch of water. Bake for 20-25 minutes or until crust is golden brown.
  8. Remove from baking dish and enjoy.

Lettuce Tacos















Ingredients

1.10 Lettuce Leaves
2.1 Can Baked Beans
3.1 Cup Boiled Rice
4.1/2 Cup Bell Peppers
5.1 Cup Boiled Corn
6.1 Cup Shredded Chicken (cooked)
7.1 Ripe Avacado (cut into pieces)
8.Salt (to taste)
9.1 Tsp Cayenne Pepper
10.1 Tsp Mixed Herbs
11.1 Cup Salsa Sauce
12.1 Cup Sour Cream


Instructions

1.Wash, dry and spread lettuce leaves.
2.Spread a spoon of salsa sauce on the base and top it with a layer of boiled rice and baked beans.
3.In a bowl, mix bell peppers, corn, shredded chicken, salt, pepper and herbs.
4.Spread the mixture on lettuce leaves.
5.Garnish it with fresh pieces of diced avocados.
6.Fold the lettuce leaf into half.
7.Serve lettuce tacos with sour cream and salsa.

PS – Vegetarians can replace chicken for herbed cottage cheese.

Avocado Deviled Eggs


















Ingredients:


1.1 Dozen Hard Boiled Eggs
2.2 Medium Avocados Pulp
3.¼ Cup Mayonnaise
4.4-5 Teaspoons Pesto
5.¼ Teaspoon Garlic Powder
6.¼ Teaspoon Ground Red Cayenne Pepper
7.½ Teaspoon Salt
8.Cilantro Leaves For Garnish


Instructions:
1.Slice eggs in half lengthwise. Scoop out the yolks and place in a medium bowl.
2.Add avocado and yolks to bowl and mash thoroughly with a fork until smooth.
3.Add mayonnaise, pesto, garlic powder, cayenne pepper and salt. Stir well.
4.Place filling in the whites using a small spoon or pipe in with a pastry bag. 
5.Garnish with chopped cilantro. Serve immediately or refrigerate in a tightly covered
container.
