Ingredients
- 1 cup Whole Wheat Flour
- 1/2 tsp Cinnamon
- 1 tbsp Baking Powder
- 1 cup Milk
- 1 tbsp Coconut Oil
- 2 tsp Honey
- 2 tbsp Water or as needed
- 1 tsp Vanilla Extract
- 2 tbsp Butter, melted
- 1/2 tsp Salt
Instructions
- Add the dry ingredients together in a bowl and mix to combine.
- Warm the milk a bit and add the oil, vanilla, water and honey to it. Blend it together.
- Pour this mixture to the dry mix slowly. Whisk together until just combined. Don't overmix.
- Set aside for about 8-10 minutes. You will find that the batter has puffed up a bit.
- Add the melted butter to the batter. Whisk gently to combine.
- At this point check for consistency. The batter should be thick yet should flow.
- Heat a skillet over medium-high heat until hot. Pour 1/4 cup of batter into the skillet for each pancake.
- Cook until bubbles form on the surface.
- Carefully flip pancakes and cook the other side until golden brown.
- Repeat for the remaining batter.
- Serve pancakes with fruit sauce, honey or maple syrup.
