Whole Wheat Pancakes



Ingredients
  1. 1 cup Whole Wheat Flour
  2. 1/2 tsp Cinnamon
  3. 1 tbsp Baking Powder
  4. 1 cup Milk
  5. 1 tbsp Coconut Oil
  6. 2 tsp Honey
  7. 2 tbsp Water or as needed
  8. 1 tsp Vanilla Extract
  9. 2 tbsp Butter, melted
  10. 1/2 tsp Salt
Instructions
  1. Add the dry ingredients together in a bowl and mix to combine.
  2. Warm the milk a bit and add the oil, vanilla, water and honey to it.  Blend it together.
  3. Pour this mixture to the dry mix slowly. Whisk together until just combined. Don't overmix.
  4. Set aside for about 8-10 minutes. You will find that the batter has puffed up a bit.
  5. Add the melted butter to the batter. Whisk gently to combine. 
  6. At this point check for consistency. The batter should be thick yet should flow. 
  7. Heat a skillet over medium-high heat until hot. Pour 1/4 cup of batter into the skillet for each pancake.
  8. Cook until bubbles form on the surface. 
  9. Carefully flip pancakes and cook the other side until golden brown.
  10. Repeat for the remaining batter.
  11. Serve pancakes with fruit sauce, honey or maple syrup.
