Hummus

 Ingredients
  1. 30 gms of boiled chickpeas
  2. 1/4 cup liquid from boiled chickpeas
  3. 3-5 tablespoons lemon juice (depending on taste)
  4. 1 1/2 tablespoons tahini
  5. 2 cloves garlic, crushed
  6. 1/2 teaspoon salt
  7. 2 tablespoons olive oil

Whole Wheat Pancakes



Ingredients
  1. 1 cup Whole Wheat Flour
  2. 1/2 tsp Cinnamon
  3. 1 tbsp Baking Powder
  4. 1 cup Milk
  5. 1 tbsp Coconut Oil

Zucchini Tacos

Ingredients
  1. 2 large zucchini
  2. 1 tbsp. olive oil
  3. 2 cloves garlic, minced
  4. 1 tbsp. chili powder
  5. 1 tbsp. onion powder
  6. 2 tsp. ground cumin
  7. 1 tsp. dried oregano
  8. 1 tsp. smoked paprika
  9. 1/2 tsp. cayenne
  10. 1 (8-ounce) package tofu, crumbled
  11. 1 ear corn, kernels removed (or 1/2 cup frozen corn)

Baked Eggplant Rollatini - Recipe



Ingredients:



Spoon Marinara Sauce over rolls; sprinkle with remaining 2/3 cup Parmesan cheese. Bake uncovered until Rollatini are heated through and Mozzarella Cheese melts, about 30 minutes.
